Collective kitchens have extraction systems that have been designed to evacuate fumes, vapours and odours. The vapours extracted contain a considerable amount of grease content that forms a layer on the surfaces over which they pass. This grease is highly flammable, and pipe shafts constitute an element along which fire can spread and are responsible for the majority of fires that break out in buildings.
In addition, dirt-laden systems mean that ventilation fans must work harder and consume more energy than necessary, with the resulting increase in energy costs and the generation of bad odours due to in adequate ventilation.
